Panch Phoran is a collection of five whole spices, easy to grab instead of measuring each spice individually every time. The spices compliment each other and their taste is enhanced by roasting or frying them before adding meat or vegetables. Panch Phoran is great for seasoning green beans, okra, eggplant, most daals and fish. It can be used with other seasonings such as asafoetida, onion and garlic.
2 tbsps. cumin seeds
2 tbsps. fennel seeds
2 tbsps. yellow mustard seeds
1 1/2 tbsps. fenugreek seeds
2 tbsps. onion or nigella seeds

Mix all the ingredients and store in a jar in a cool, dry place.
